Honey Cupcakes with Sugar Beet Frosting

      At this point, one may wish to take note of our love of tubers.  Today, after the little incident with a certain polish cookbook, we decided we needed a little something to.... brighten the mood.  After a quicky to Whole Foods, we returned with spirits considerably heightened as we had purchased several large, purple beets (among other delightful savories).  Although many of you may find beets, well, rather daunting, to say the least, here at Hipster Gourmet, we see the potential in even the most frightening of root vegetables.
      After whipping up a box of organic honey cupcakes, we juiced our newly purchased beets and combined the sugary, magenta liquid with a simple vanilla frosting (homemade of course).  The result:

LUSTFUL.
(and relatively healthy, too)
